Recipe: Beet Burgers

The deep purple color of these burgers make us swoon. Even better is the taste: a deep rich earthiness with tons of flavor! This beet burger is ideal for vegans that get those burger cravings but don’t want to cave in. 


Beet Burgers

  • beet – 1/2
  • old fashioned oats – 3 tablespoon
  • frozen lentils – 1 ounce
  • all purpose flour – 1 ounce
  • yellow onion – 1/8
  • garlic – 1 1/2 teaspoon
  • peanut butter – 3/4 teaspoon
  • dried thyme – 1/2 teaspoon
  • salt – 1/8 teaspoon
  • black pepper – 1/8 teaspoon
  • arugula – 4 tablespoon
  • sesame seed bun – 1
  • extra virgin olive oil – 3/4 teaspoon
  • bean sprouts – 2 tablespoon


  1. Grate beets.
  2. Add grated beets to food processor, along with oats, thawed lentils, flour, diced onion, minced garlic, peanut butter, thyme, salt, and pepper. Grind until mixture is smooth.
  3. Form mix into 4 patties.
  4. Heat olive oil in a pan on medium-high. Add patties and cook 3-5 minutes per side.
  5. Slice bun and top with arugula, bean sprouts, beet patty, and your choice of condiments.
  6. Serve.
