Recipe: Chicken Stir Fry with Peanuts, Zucchini, and Red Pepper

  • boneless skinless chicken thighs – 4 ounce
  • peanuts – 1/2 ounce
  • zucchini – 1/4
  • red bell pepper – 1/4
  • garlic – 3/4 teaspoon
  • ginger – 1/4 teaspoon
  • hoisin sauce – 1 1/2 teaspoon
  • sesame oil – 1/2 teaspoon
  • white rice – 4 tablespoon
  • black pepper – 1/8 teaspoon
  • low sodium soy sauce – 3/4 teaspoon


  1. Cook rice by package directions.
  2. Heat a wok or saute pan over medium heat and add sesame oil.
  3. Cut chicken thighs into thin strips ans stir fry in oil.
  4. Cut zucchini and red pepper into a one inch dice and add with chicken.
  5. Mix together soy, hoisin, minced ginger, black pepper, and minced garlic.
  6. Add sauce and cook until chicken is cooked through.
  7. Serve chicken over rice and garnish with chopped peanuts.
