Recipe: Coconut Curry Turkey Breast with Mixed Vegetables

Coconut Curry Turkey Breast with Mixed Vegetables

Ingredients

  • turkey breast – 3 ounce
  • chickpeas – 2 ounce
  • baby carrot – 2 ounce
  • celery – 1/2 stalk
  • sweet potato – 1/4
  • grape tomatoes – 1 ounce
  • red onion – 1/4
  • red bell pepper – 1/4
  • green bell pepper – 1/4
  • scallions – 1/2 stalk
  • garlic – 1 tablespoon
  • dried thyme – 1/2 teaspoon
  • dried cilantro – 1/2 teaspoon
  • curry powder – 1/4 teaspoon
  • turmeric – 1/8 teaspoon
  • cinnamon – 1/8 teaspoon
  • nutmeg – 1/8 teaspoon
  • paprika – 1/8 teaspoon
  • cumin – 1/8 teaspoon
  • salt – 1/8 teaspoon
  • black pepper – 1/4 teaspoon
  • coconut milk – 2 tablespoon
  • vegetable stock – 4 tablespoon

Directions

  1. In a medium bowl mix sliced turkey breast, dry seasonings (curry powder, turmeric, cumin, paprika, cinnamon and nutmeg).
  2. Place a large pan on medium heat with olive oil.
  3. Coarsely chop all vegetables.
  4. Sauté onions and garlic until translucent. Add seasoned turkey breast and saute for 10 minutes.
  5. Add stock and sweet potato. Cook (covered) for 10 minutes, stirring occasionally.
  6. Reduce heat to medium low.
  7. Add remaining vegetables, coconut milk, and cilantro and cook (covered) for an additional 15-20 minutes, until veggies and turkey are tender.
