How enticing does that colorful bowl look? Healthy and filling, this wholesome dish brings together a ton of our favorite, light ingredients: avocado, edamame, tomatoes, radishes, butternut squash, quinoa, red onions and cherry tomatoes. There’s so much flavor in this bowl, you won’t even need a dressing!
Avocado Edamame Quinoa Bowl
Original # of Servings: 1
quinoa – 4 tablespoon
avocado – 1/4
edamame – 1 1/2 ounce
red onion – 1/8
cherry tomatoes – 2 tablespoon
radish – 1
butternut squash – 1 5/8 ounce
- Cook quinoa according to package instructions.
- Dice butternut squash and steam until soft. Cook edamame according to package instructions. Slice radish, cherry tomatoes, and red onion. Dice avocado.
- Transfer quinoa to serving dish and top with vegetables.
