Turkey Avocado Salad

deli turkey – 2 ounce
cucumber – 1/2
salad mix – 1 cup
parsley – 1 tablespoon
cherry tomatoes – 8 tablespoon
extra virgin olive oil – 1 tablespoon
red wine vinegar – 1 tablespoon
- Slice thick-cut deli turkey into bite-sized pieces.
- Chop tomato, cucumber, and parsley.
- Combine salad mix, vegetables, and turkey in a bowl. Pour in oil and vinegar, and toss until mixed well.
- Season to taste, and serve.
