Recipe: Moroccan Lentils

If you’re a looking for a great side dish that’s also a source of vegetarian protein, Moroccan lentils are a perfect option. To make this dish more of a meal, top these perfectly-cooked, delicately-flavored lentils with a fried egg and enjoy!


Moroccan Lentils 

Original # of Servings: 1

Total Time: 55 minutes

Active Time: 10 minutes


  • frozen lentils – 6 ounce
  • fresh mint – 1 1/2 teaspoon
  • grape tomatoes – 2 ounce
  • cucumber – 1/8
  • salt – 1/8 teaspoon
  • black pepper – 1/8 teaspoon
  • cumin – 1/4 teaspoon
  • garlic powder – 1/4 teaspoon
  • baby spinach – 1 ounce
  • extra virgin olive oil – 1 1/2 teaspoon


  1. Quarter tomatoes.
  2. Trim end of cucumber and peel. Quarter.
  3. Mince mint.
  4. Bring pot of water to boil. Cook 20-30 minutes until done.
  5. Drain water from lentils. Mix in spices, olive oil, mint and tomato.
  6. Chill 15 minutes.
  7. Mix in spinach and serve.
