It’s time to shed those winter coats… and maybe those couple extra winter pounds too. With spring weather comes lighter fare, and so we’ve prepared a list of veggie-based dishes for the new season. From the perfect salad to bring to a get-together at a friend’s, to the on-the-go workplace lunch, My Happy Plates has you covered.
1. Fresh Mozzarella and Tomato Salad
As tomatoes come back into season, so does one of my favorite side dishes. With a few simple touches (think olive oil and fresh basil), one bite will transport you to Southern Italy. It gets better– no cooking required, and it’s done in under five minutes.
2. Couscous and Vegetable Jar
Impress all your coworkers by bringing this beautiful veggie medley into work this week. Make sure to save your empty jars– you’ll love how easy they are to carry to the office.
3. Vegetarian Pho
This recipe is ideal for those chillier spring nights, the ones that remind us that summer is not quite here yet. With ginger to soothe your stomach, jalapeño to clear your sinuses, and warm broth to coat your throat, this vegetarian pho will combat any leftover winter colds (and allergies, too!).
4. Quinoa Stuffed Avocado
If you think all the way back to our post on the reasons to adore avocados, we mentioned how much we love stuffing avocados. The quinoa, corn, and black bean filling packs a protein punch that will leave you feeling satisfied through the afternoon. This recipe is also a delicious way to incorporate some healthy snacks into your kids’ diets!
